the crackling was perfect! the crackling itself was perfect! the recipe i followed worked out great (my version of it) for the a 6lb pork loin but if you do use a smaller roast, you may need to increase cooking time slightly. i left it for 20 mins then poked it all over with a fork and then put a piece of foil on top for another 10 mins. if you dont have a pork loin, then i would recommend using a small to medium pork shoulder.
i like to think i do! ive worked out several versions of the crackling recipe. i would agree with thatthe oven idea will release more oils causing the crackling to be more crispy, however the use of a frying pan over heat is basically a smoker, making for a different texture.
as always, when dealing with cooking anything using a microwave, proceed with caution. i once cooked a big pork butt for a family get together and ended up with a massive pork roast to feed the group. it only took 1/2 the time and much less attention than cooking it on the stove. i saved a bit of money as well. the biggest concern, in my case, was there had to be a fair amount of water in the pork to keep it moist. so, i agree with the caution of cooking a thick, lean piece of meat with minimal fat. thats all i can really advise. thanks for the recipe, i love it!
yes, of course. thats why ive posted it. ive cooked it in the oven and in the microwave. i chose the oven over the microwave because, as stated above, the oven releases more oil from the pork. and i like to push my cracklings to the limits. the problem is, it has never been perfect! so ive cooked in the oven for hours on end with no luck. until this morning, that is. i just used about 6 minutes of microwave cooking time with no problems. 81555fee3f
